Here we have a good example. In both DRY AGERs there is a Hanger bar. On both hangs meat. However, on the left side the Hanger is facing down and in the right cabinet it is facing up. What is right now? Clear answer: The right one! The Hanger must always be aligned upwards. This way you can load them with the full 80 kg.
